Chicken Madras

  • 1 Jar of Ally’s Tomato-Free Sauce
  • 1 Large Onion (chopped)
  • 5tsp Madras Powder/paste
  • 500g Chicken Breast Fillets
  • 20ml Ghee (clarified butter) or vegetable oil
  • Water
  • Fresh coriander garnish

Add the chopped onion and ghee/oil to a pan. Cook on a medium heat until the onion has turned soft and is starting to go brown.

Pour in the jar of Ally’s No Tomato Sauce, 100ml of water and the madras powder (or madras paste) and bring to the boil.  Chop your chicken breast fillets into small pieces, and add to the sauce. Turn down the heat and simmer for approximately 35 minutes (or until the chicken is well cooked) adding some water as required to prevent it from drying out.

Serve with your favourite rice and Naan bread.  Garnish with fresh coriander.
